With the sun FINALLY shining, and Spring making its delayed entry, we’re fully embracing National Shrimp Scampi Day! Keto friendly and utilizing our BETTER//BROTH™ Keto Thyme, these buttery garlic shrimp are great on their own in the sauce or served over zucchini noodles.
Shrimp Scampi
Ingredients
- 1 lb, raw Shrimp, shelled & deveined
- 2 tbsp olive oil
- 2-3 tbsp butter
- 3-4 cloves garlic, chopped
- 1 packet BETTER//BROTH™ Keto Thyme
- 1 cup water
- 2 tbsp parsley, finely chopped
- 1 tbsp lemon juice
- Salt & pepper to taste
Instructions
- Over medium heat, melt butter in olive oil
- Add in garlic and sauté until soft Make sure to not burn the garlic!
- Add in Shrimp and ½ cup of BETTER//BROTH™ Keto Thyme
- Increase heat to bring the liquid to a boil
- Cook shrimp 2 minutes, flip over, cook another 2 minutes Shrimp will be pink all over when cooked thoroughly and properly
- Remove pan from heat, add parsley, lemon juice, and salt & pepper.
- Toss shrimp to coat evenly in this heavenly goodness
- Enjoy!
